Greetings from the Netherlands....


I am quite the world traveler this week.
First Japan then Amsterdam-Ahhh Amsterdam. One of my more interesting places to go.... This is definitely one of the best places to people watch - very interesting people and things to see. I love the old buildings and churches they are amazing. I took a walk through the red light district today only because I took what I thought was a shortcut and ended up there. I have been there once before pretty much my first trip to Amsterdam cause its something you have to see or you may see things you never want to see again. It shocked me all over again- I just got back from my routine walk downtown and to the grocery store- I love the bread over here my dinner consists of a baguette and some cheese when I'm here . Off to bed now just wanted to send a little glance of my life on the road.

Red Velvet Cheesecake part 2

OK here's the recipe- I was a little nervous about the water bath but I tried it- I think that some water got in because the Oreo crust was stuck to the pan so next time no water bath - Even if it cracks its covered with frosting so its hidable - the only other thing I thought needed altering was the frosting- it was way to sweet so I put in more cream cheese than the recipe called for.


Red Velvet Cheesecake


Wonderful holiday dessert...



CRUST:


17 regular-sized


oreo cookies, crushed finely (or 1½ cups chocolate graham cracker crumbs)


¼ cup


butter, melted


1 Tbs


granulated sugar




CHEESECAKE:


Three 8-ounce


packages cream cheese, softened


1½ cups


granulated sugar


4 large


eggs, lightly beaten


3 Tbs


unsweetened cocoa


1 cup


sour cream


½ cup


buttermilk


2 tsp


vanilla extract


1 tsp


distilled white vinegar


Two 1-ounce


bottles red food coloring




FROSTING:


One 3-ounce


package cream cheese, softened


¼ cup


butter, softened


2 cups


powdered sugar, sifted


1 tsp


vanilla extract




fresh mint sprigs, for garnish




heavy duty foil

Prepare crust: Stir together oreo crumbs, melted butter, and 1 Tbsp. granulated sugar; press mixture into bottom of 9-inch springform pan.

Preheat oven to 325°F. Prepare water bath: Fill large roasting pan (big enough for springform pan to fit into) with about 1 inch of water. Place in oven and allow to preheat along with the oven.

Prepare filling: Beat cream cheese and sugar at medium-low speed with an electric mixer for 1 minute. Add eggs and remaining cheesecake ingredients, mixing on low speed just until fully combined. Pour batter into prepared crust.

Take out two sheets of heavy duty foil and layer them on top of one another. Place springform pan on top of the foil and wrap the foil gently around the pan and up the sides. Make sure that there are no tears or holes and that the foil comes all the way up around all sides of the cake. Carefully place the foil-protected pan into the water bath in the preheated oven.

Bake for 10 minutes; reduce heat to 300°F. Bake for an additional 75 minutes or until the center is firm. Turn oven off. Let cheesecake stand in oven for 30 minutes. Remove cheesecake from oven. Carefully remove cheesecake from water bath and place on wire rack. Run a thin knife around the outer edge of the cheesecake. Cool on rack for a couple of hours, until the cheesecake becomes close to room temperature. Cover and chill for at least 8 hours (or overnight). Remove sides of springform pan.

Prepare frosting: Beat cream cheese and butter at medium speed with an electric mixer until smooth. Gradually add powdered sugar and vanilla, beating until smooth. Spread evenly on top of cheesecake. Garnish, if desired.


Cooking Tips

*You may choose to bake the cheesecake instead with no water bath. Bake at 325 for 10 minutes; reduce heat to 300 and bake for an additional 75 minutes. Let cheesecake stand in oven 30 minutes. Remove from oven; cool in pan on wire rack for 30 minutes. (Baking without a water bath - you run the risk of cracking the top of the cheesecake).

I found a recipe for Red Velvet Cheesecake which Red Velvet is Carol's favorite cake and Cheesecake - who doesn't like Cheesecake...It's kinda crazy looking but festive for sure- hope its good my first real cheesecake ever....

Christmas Morning!

Merry Christmas! I hope everyone had a fantastic Christmas! I was very blessed not to fly today... I still after 10 years can not officially have Christmas off so I am on call and getting Holiday pay today to spend with my family - yippee!

He came! He came! Too famous visitors in one week! We are blessed

Not too mention the stockings and gifts under the tree he left one present that was almost as big as Derek!

Almost time!


We are ready for Santa! We are all wearing our new Christmas Eve jammies- the cookies and carrots are waiting. Little ones in bed waiting anxiously for morning.. Derek said he was ready for bed at 6 tonight. Ahhh if only Christmas could come every morning! Life would be so much easier.....

A special visitor

Well I just got home from Japan this morning and discovered we had a special visitor come to our house while I was away. Are you ready???? (- hint she's famous!!!!!!!)The Tooth Fairy!
Yep Derek lost his first tooth ever- very exciting. Its been loose for about 2 weeks so he has been anxious for when it would come out.. Apparently all he needed for it to come out was a wad of bubble gum. So I'm thinking I got jipped as a kid cause the tooth fairy seems to be doing well these days.Oh yes he also got something else out of the deal,,,
a lisp =)

Christmas Cookie Madness

Well it snowed last night and was a chilly -13 degrees today. So perfect day for xmas cookies. I usually make up a little variety and take it to our neighbors. I sure hope they like chocolate! 3 kinds of truffles, m&m shortbread cookies and chocolate dipped ritz crackers and they have to leave our house other wise I will eat them. Derek helped with them a lot this year especially the sprinkles . Here are the two favorites and easy and they look pretty!

GEORGIA CRACKERS
Chocolate for dipping (almond bark works good)
Ritz crackers
Peanut butter
Spread crackers with peanut butter. Make sandwich .Dip sandwiches into chocolate with tongs and place on was paper to harden. You can use either the white or dark chocolate. Decorate with sprinkles, or put white or dark choc melted in a zip lock cut tip off one end and drizzle for a more professional look.
Yum Yum if you like butterfingers you will like this!
This one is wicked good

  • 1 bag Oreo cookies (1lb. 4oz.) crushed
  • 1 8 oz. pkg cream cheese (either regular or 1/3 less fat, both work) softened
  • 1- 20 oz. chocolate almond bark or semi sweet baking chocolate

DIRECTIONS

  1. Crush Oreos in a ziploc bag.
  2. Crush with a rolling pin or in a food processor. When crushed put in a large bowl with softened cream cheese.
  3. Mix well with your hands.
  4. Don't worry if you see a little cream cheese showing occasionally. (Just a messy job with your hands but it will come out fine.)
  5. Roll into 1 inch balls. Put them on a wax papered lined cookie sheet and freeze for about 20 minutes while you melt the chocolate.
  6. I melt the chocolate in the microwave for about 1 minute.
  7. You might need to microwave more but do for about 20 seconds each time, so you don't scorch the chocolate.
  8. Be sure to watch and stir.
  9. When fully melted get the truffles out of the freezer.
  10. Dip with a fork and put on a waxpaper-lined cookie sheet and let harden.
  11. When hard, place truffles in a covered container and keep in the refrigerator.
I usually make these with white and chocolate and drizzle the opposite to make it look fancy or sprinkle a little of the oreo mixture on top sprinkles whatever you want. I made these this year with regular oreos and then a batch with mint oreos (my favorite) its a huge hit at partys!

Off to Menards







Whats Menards? - a midwest home depot type store with better prices. So we finally went to go pick up our Christmas tree The bad news was they were almost gone (will have to go earlier next year) So 2 trees to choose from - at least this one looks better than last years bald spots and missing branches .......
Well the kids had fun running around the store


And playing in the ice huts (another midwest thing...)
and trying to beat each other with shovels.... ahhh boys

Sweet tooth! Drew has been all over the my chocolate pudding snacks today - I had to move them higher because he kept on getting them out of the fridge- guess he inherited over snacking from me. That's about exciting as our day got today besides going to Target!

Nana's recipes of the week

I came across my late Nana's recipe book. It put a smile on my face- she was such a wonderful woman and I miss her everyday.

This one definitely brought back memories I use to love to eat this

Tuna Potato Chip Casserole

1 can mushroom soup
3/4 cup milk
2 tablespoons chopped onions
salt & pepper
2 cups crushed lays potato chips
1 can tuna drained
Chips for garnish

Preheat oven at 350 degrees
Blend tuna,milk,cream of mushroom, salt and pepper together. In Baking dish put 1/2 chips in baking dish top with 1/2 tuna mix repeat layers and garnish top with chips. Bake at 350 for 30 minutes.





These tea cakes were a favorite in our house. My mom still makes them every year (I think). Definitely reminds me of the holidays.


RUSSIAN TEA CAKES

1 cup softened butter
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cup flour
1/4 teaspoon salt
3/4 cup chopped nuts

Heat oven to 400 degrees. Mix thoroughly butter, sugar, and vanilla.
Work in flour, salt and nuts. Shape into 1 inch balls. Place on ungreased cookie sheet.
Bake 10-12 minutes, until set, not brown. While warm roll in powdered sugar. Cool. Roll again in sugar and enjoy!

Time for some hot chocolate




So it seems like whenever we make plans to take pics it somehow doesn't seem to work out.
1. Could not get Drew down for a nap which as most of us know that pics and a cranky toddler who hasn't napped yet is not a good combo -
Right time a day- it was way too bright earlier with all the white snow so we wanted to wait until the afternoon(nap time) and it starts to get dark here at 4 :30!
Photographer called in sick- lastly I didn't have anyone to take pics! My friend Jackie was going to take our pics but she came down with a migraine which pretty much means she's done for the day.
AHhh well maybe this weekend if I don't have to fly? So Derek and I decided to walk to the park brrrrrrr.... and then run home and make hot chocolate!

Baby it's cold outside


We woke up to a fresh blanket of snow this morning. I am just enjoying my morning coffee (2nd cup) looking out at the beauty while on my new laptop (thank you black Friday - actually Sunday=) while Drew watches Dora. We are going to try and take some pics for our Christmas cards with the beautiful scenery later- will post if we can swing it today pics later.............

Now that Derek is in kindergarten (Half day) I enjoy my mornings alone with Drew. I sometimes feel guilty that Drew doesn't get the one on one time like Derek did (hmmm well he was an only child for 4 years)

23 days until Christmas

I love Christmas. It is my favorite holiday . Well last night we got all of our xmas decorations down and put them up. I got everything done but we still need to go out and pick our xmas tree. I love going through all the decorations - I kinda have a Target problem. I always wait for the xmas stuff to go on clearance and buy stuff for the next year so its fun to see what's in the boxes because I never remember. I ask Steve every year to put up xmas lights and he never does (SCROOGE) so I decided to tackle it myself this year. I did not go crazy because I am suicidal on a ladder (kind of a clutz).....

The next day....

Well Yesterday was Thanksgiving. We went over to Carol and Wades to eat some turkey...

Derek loved the sweet potatoes and of course Drew loved the turkey which is all he ate. ( He is a meat man).








So I made Paula Deens pumpkin pie with homemade whipped cream and sweet potato pie with marshmallows. They were both good but Paula Deen won hands down

We had a great Thanksgiving and we hope that everyone else did too! Now I have to get through the left overs so I can start back on my diet....

So this morning I woke up at 3 am. Went to pick up Laura at 3:30 the house was pitch black and I was tapping on the window hoping the neighbors didn't call the cops on me so I ended up going out alone on Black Friday- Laura finally woke up about 8:30!!!!
So I started at Kohls at 4 am checked out at 4:10 hmmm now what I had 50 minutes until Walmart opened. Went and sat in my car- hey its Minnesota I am not nuts people had tents and sleeping bags. Went to Walmart at 5 am checked out at 5:15 now I have 45 minutes until Office Depot opened where I could get a chance at a cheap laptop. I'm finding that if you don't have a lot to buy or know exactly what you need this is getting kinda long and boring. So I went back to my car got in line about 5:30 with about 300 people- when I finally got in of course there were no more laptops they only had 10 in the store ahhhh well. I got the other thing we wanted there but had to wait in line and talk to strangers for a hour and a half- made a couple short stops on my way home and was home about 8:30 - then a couple of hours later I took the kids and went shopping again!!!!! So fun can't wait till next year!
