Recipe of the Month- Homemade Chips and Guacamole


Well I have been slacking on my Recipe of the weeks so I will just call this Recipe of the month

Homemade Chips and Guacomole
Super addicting and probably had something to do with me not keeping my weight off...... Margaritas didn't help either but one issue at a time.

Homemade Chips

You can either use corn tortillas or make your own. I make mine but its not as complicated as it sounds . You just need a tortilla press and a cast iron skillet or tortilla pan or a griddle works good too . Just look for a tortilla flour mix I like MASECA . You just add water, press, and cook. Follow the directions on the bag. So once you have your tortillas you just cut them in triangles and fry them in vegetable oil when they start to bubble and brown they are done. Take them out and put them on a plate with papertowels sprinkle with salt. These are soooo goood and so much better than store bought chips. They are usually eaten faster than I can make them.

Here's are favorite Guacamole
I don't usually measure I just throw stuff in so my measurements are guesstimates.

2 avocados ripe
salsa verde (about 1/2 cup) (green salsa)
pinch of salt
2 tbsp chopped white onion
2 tbsp fresh cilantro
1 tsp minced garlic
squeeze of lime

Now here's my secret this Guacamole is always a hit. I blend it together. I use my magic bullet but a blender works too. Now if you don't have a lot of ingredients you can just use the salsa verde avocados and salt and blend it up and its still good.... save the pits and put them in the guacamole this will help keep it from turning brown.

Puerto Rico

So I just got back from Puerto Rico last night. I was really excited because I haven't had a layover there before and it was neg 30 at my house the morning I left. Well I was surprised when I got there and was no where near the beach! They had us in the business district there was some places restaurants and stuff but not much . We got there around 8 pm Friday night and I asked the bellboy if there was anywhere we could walk for dinner. He said there was some places but walking as females at night was not a good idea because the only women walking at night are "working girls" . Great ......... so no party time for me in Puerto Rico- Thats all right I thought theres a pool I can enjoy the sunshine all day the next day since we didn't leave until 5 at night. Well it rained all day so it was a bust. The girls and I did walk around in the rain & the mugginess. I took my camera expecting to get beautiful shots of the ocean and since there wasn't much interesting around this is what I got. The best part of the trip was lunch! I had Ratatouille and it was amazing and really cool looking just like the movie- I should of took a pic but I was too busy eating it!

New Years Resolutions

a little late but hey I was working....
I usually don't do resolutions but thought of a few goals I would like to do this year

1. Spend more fun time with my kids. It seems like life is so busy these days with work and school , doctors appt. the day to day grind of keeping the house up, running businesses, ect. ect.. I never seem to have time to get done everything I need to get done but at the end of the day all that matters is family and friends and great times verses I have no fond memories of cleaning and grocery shopping I need more fun time (and a maid) !

2. Of course there has got to be a little about weight loss- my biggest battle is either losing or not gaining it back and its a never ending battle- so getting to my goal weight and staying there would be great.

3.Learning a second language- hello Rosetta Stone

4.Becoming a jogger (ha ha this one makes me laugh but I want to try)

Steve is working on teaching Drew all about turbo cars.

Happy New Year!

Well its 4 am - no I am no party animal= just off to work . I did make it to midnight for a new years kiss barely since I had to wake up at 3:30 am - Hope everyone had fun! Here's to a awesome 2009 and accomplishing all the resolutions! My list keeps getting longer........
